Muffin Tin Monday: Chili Muffins

Today I got a new muffin tin. I'm excited about starting out the new year doing Muffin Tin Monday's again. So tonight I made chili muffins and cucumber tomato salad for dinner. It was super easy and quick. They were also delicious. The kids devoured them.
 
 



The Chili is very simple. And you don't have to use the peppers... substitute whatever veggie you like. The salad is also very easy. If you don't like the bitter taste of Apple Cider Vinegar you may want to dilute with equal amount vinegar and water.

Super Easy Meat Chili
Ingredients:
1lb Ground beef
1/2 medium green pepper (diced)
1/2 medium red pepper (diced)
1/2 medium yellow onion (diced)
1 10oz can diced tomatoes with Green Chilies
1/2 cup nacho cheese (or canned cheese sauce)
1/4 cup Chili powder or 1 package chili seasoning
1 1/4 cups water
1 box Jiffy Corn Bread mix
1 egg (for Jiffy mix)
1/3 cup milk or 1/3 cup water (for Jiffy mix)

 Directions:
*Preheat oven at 425°. 
*Cook Ground beef in deep skillet at medium heat. Add peppers and onions. Drain excess grease (do not rinse).
*Add 1 1/4 cups water, chili powder, canned diced tomatoes with liquid, and nacho cheese. Simmer on medium low until it is reduced with very little liquid.
*Prepare Jiffy mix according to package.
*Line muffin tin with liners.
*Spoon Chili mix into muffin tin (about 1/4 cup of mix per liner)
*Spoon Cornbread mix into muffin tin (about 1 tablespoon per liner)
*Bake 12-15 minutes.

Cucumber Tomato Salad
Ingredients:
1 large cucumber
1/2 small yellow onion (diced)
1 medium tomato (diced)
1/2 cup Apple Cider Vinegar
Salt to taste (I used about 1 teaspoon)
Pepper to taste (I used about 1 1/2 teaspoons)
Dill weed to taste (I used about 1/2 teaspoon) 

Directions:
Remove skin of cucumber and onion then diced. Dice tomato. Toss in medium bowl with remaining ingredients.
